Listen, I know it’s not summer. But spring is approaching, and I cannot wait for day after day of sunshine and barefoot goodness. I decided to look ahead to warmer temps and make a garlicky, buttery shrimp pasta dish. I kind of threw this together, but it turned out so well that I had to share!
What you need:
- unpeeled shrimp
- garlic powder (or fresh garlic)
- butter (or olive oil)
- black pepper
- dried oregano
- red pepper flakes
- shredded parmesan cheese
First, get your water boiling and toss in your desired amount of spaghetti with salt.
While it boils, get started on your shrimp by melting butter in a pan and putting in your thawed (if frozen), dry, unpeeled shrimp. It’s important that the shrimp remain unpeeled, as this will seal in the flavorful juiciness! Season generously with salt, pepper and garlic powder. Flip shrimp so both sides are pink and opaque.
For the sauce, you’ll want to melt butter in a small pan. Add a generous amount of garlic powder and black pepper. Then add in a sprinkle of salt, red pepper and oregano. Stir.
Drain spaghetti. Peel shrimp immediately before serving. Pour butter sauce over shrimp and spaghetti. Serve with shredded parmesan.
